Oven confidence
Roast chicken, checked properly
A golden skin makes a promise. A thermometer tells you what is happening underneath it, so you can stop guessing at dinner.

TAKE IT STEP BY STEP
The method.
Prepare the oven and tray
Heat the oven to 190°C conventional / 170°C fan. Put onion wedges in a roasting tin that holds the chicken comfortably. Use a fully thawed, unstuffed bird for this guide; stuffing and a larger bird change the cooking.
Dry and season
Pat the chicken dry with kitchen paper without rinsing it. Rub with the oil and season. Sit it breast-side up on the onion with the optional thyme. Wash hands and clean anything that touched the raw chicken before handling ready-to-eat food.
Roast without constant interruption
Roast on the middle shelf. For a 1.5 kg bird, begin checking around 75 minutes; it may need about 80–100 minutes overall. Oven performance and the bird’s shape vary, so this timing is a planning range rather than the doneness test.
Measure in three places
Insert the thermometer into the thickest breast and the innermost thigh and wing, avoiding bone. All three should reach at least 74°C / 165°F. If any reading is lower, return the bird to the oven and recheck after 5–10 minutes. Clean the probe as needed between checks.
Rest on a clean board
Once the temperature is reached, transfer the bird to a clean board or platter. Rest for 15–20 minutes before carving. Keep the crisp skin uncovered or cover very loosely, and collect the juices for a sauce.
WHEN IT GOES SIDEWAYS
A small fix.
The skin is dark before the centre is ready
Cover the dark areas loosely with foil and continue cooking. The lowest internal reading still determines whether the bird needs more time.
The breast is ready but the thigh is not
Keep cooking and shield the breast with foil. Check that the probe is in the thick meat, not touching bone or sitting in the cavity.
The meat seems dry
Begin temperature checks earlier next time and rest before carving. Do not lower the safety endpoint to compensate; bird size and accurate probe placement matter.
Serve with roast potatoes and greens. Keep the first roast simple; flavour changes are easier once the timing and temperature checks feel familiar.
