Sauce school

Turn the pan into a sauce

The good bits are already there. Lift them, reduce gently and finish with butter for a sauce that belongs with dinner.

TAKE IT STEP BY STEP

The method.

  1. Read the pan

After pan-frying your main ingredient, transfer it to a clean plate. Look for golden-brown patches stuck to the pan: this is fond. Pour off excess oil, leaving about 1 teaspoon. If the residue is black or smells burnt, start in a clean pan; a splash of stock cannot undo bitterness.

  2. Soften the shallot

Let an aggressively hot pan cool briefly, then return it to medium-low heat. Add the shallot and stir for 2–3 minutes until softened. Add a tablespoon of the measured stock if the edges darken too quickly.

  3. Lift and reduce

Pour in the remaining stock carefully; it will steam. Scrape the browned patches with a wooden spoon. Stir in the mustard and simmer for about 3–5 minutes, until roughly half the liquid remains. The exact time depends on the width and heat of your pan.

  4. Make it glossy

Take the pan off the heat. Whisk in the cold butter a few cubes at a time, keeping the pan moving. Aim for a light coating on a spoon, rather than a thick gravy. If the butter will not melt, return the pan to low heat briefly.

  5. Taste at the end

Taste before adding salt: reduced stock and mustard may supply enough. Add black pepper and a few drops of lemon if it needs brightness. Spoon over dinner immediately, keeping crisp edges partly uncovered.

WHEN IT GOES SIDEWAYS

A small fix.

It looks oily or separated

Off the heat, whisk in 1 teaspoon of warm water at a time. Return briefly to low heat while whisking if needed. Stop once the sauce comes together.

It is thin

Reduce the liquid a little longer before adding butter next time. Stock varies in body; a delicate sauce is fine. Avoid boiling away the water after finishing.

It is too salty

Loosen with unsalted stock or water. Recheck the flavour before reducing again, which would concentrate the salt.

Use chicken stock for poultry or mushroom stock after browning mushrooms. Keep the same sequence and change the finishing herbs to suit the plate.
